Showing our Pear Panache

David Anderson  spacer

Kudos to chef de cuisine David Anderson who was selected as one of seven chefs nationwide to be celebrated for their exceptional creativity with fresh pears. David submitted his Pear-Ginger Chutney to the Pear Panache competition and was honored for his flare with the pear. The web site dedicated to the winning chefs and their recipes is www.pearpanache.com . David’s recipe kicked-off Pear Panache which runs September thru March 2009, the height of the fresh pear season. Riffing on the more traditional mango chutney, David utilizes fresh Northwest pears typically using Bartletts or Comice. He notes, “Pears are an ideal medium for a chutney. They can be infused with a multitude of vibrant spices, like cardamom, tumeric and cayenne, yet retain their own distinct flavor.” Congratulations David.

The Passion of The Suds

Chef de cuisine David Anderson is a self-described “beer buff.” An additional benefit of his job is developing and selecting Vindalho’s program of four seasonal taps and an impressive collection of bottled beer. David has many updates for the fall season, and each Oregon tap handle is great on its own or paired with our spicy Indian dishes.

On tap for October: Friend and SE neighbor Hopworks Urban Brewing HUB Lager is a standout. This eco-brew pub on Powell Boulevard was rightly named the Silver Medal Winner in the World Cup of Beers. Their Czech-style lager is light, hoppy and refreshing. Enjoy it with just about everything on our menu. Hop Lava IPA is from Double Mountain Brewing, Hood River. This one goes down easy and is a tasty American IPA style pour. Pair it with Goan Style Mussels or our Saag Paneer Curry. This beer is full-bodied, light and ends with a sweet finish. Up from Eugene is Ninkaski’s Believer Red Ale a beautiful red head swimming in hops, malt and caramel. Our dark, rich Porter comes from Southern Oregon Brewing. The strong malt flavor and coffee, chocolate overtones are perfect complements for the Tandoor Flat Iron Steak or Lamb Boti Kababs.

Bottled options at 22 oz. reign. Kingfisher Premium Lager is what you’ll find throughout India. Toasting football season? Try the Pigskin Pale Ale from Beer Valley Brewing, Ontario, Oregon. Dick’s IPA from Centralia, Washington is refreshingly bitter, styled after the traditional British bitter. For easy drinking, enjoy Hales El Jefe Weizen Ale and its yeasty, light flavor.

But David feels his standout offering by the bottle is Krait Prestige Champagne Lager at 750 ml. This unique beer, not often seen in restaurants, is easily shared by two. It is absolutely a knock out with our food.
